Tailgating Recipes: - Hot Macadamia Spread

1 (8-ounce) package cream cheese, softened
2 tablespoons milk
1/2 cup sour cream
2 teaspoons prepared horseradish
1/4 cup finely chopped red OR green pepper
1 green onion, chopped
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/2 cup chopped macadamia nuts OR blanched almonds
2 teaspoons butter
Assorted crackers

In a mixing bowl, beat cream cheese and milk until smooth. Stir in sour cream, horseradish, green pepper, onion, garlic, salt and pepper. Spoon into an ungreased shallow 2-cup baking dish; set aside.
In a skillet, saute the nuts in butter for 3 to 4 minutes or until lightly browned. Sprinkle over the cream cheese mixture.
Bake, uncovered, at 350*F (175*C) for 20 minutes. Serve with crackers.
Makes 6 to 8 servings.

Tailgating Recipes: - Hot Jalape o Crab Dip

1 pound lump crabmeat, picked over for shells and cartilage
1 teaspoon minced garlic
1/2 cup chopped pickled jalape o
1/4 pound Monterey jack cheese, with jalape os, grated
1 teaspoon Worcestershire sauce
1 teaspoon Tabasco sauce
1/2 teaspoon salt
1/2 cup mayonnaise
2 ounces freshly grated Parmesan cheese

Preheat the oven to 350*F (175*C).
Combine the crabmeat, garlic, jalape os, Monterey Jack cheese, Worcestershire sauce, hot sauce, salt and mayonnaise in a medium-size mixing bowl. Toss gently to mix. Spoon the mixture into a medium-size shallow baking dish. Sprinkle the Parmesan evenly on the top of the crabmeat mixture.
Bake for about 25 minutes, or until golden brown and bubbly. Let sit for about 5 minutes before serving with chips, crackers, crudite or croutons.
Serves 6 to 8.

Tailgating Recipes: - Hot Crab Dip

2 (8-ounce each) packages soft cream cheese, softened
1/4 cup milk
1 tablespoon Worcestershire sauce
1 tablespoon dried parsley leaves
1 teaspoon salt
1 teaspoon horseradish
1 teaspoon dry mustard
1/2 teaspoon garlic powder
1/4 teaspoon ground pepper
1/4 cup chopped green onions
2 (6-ounce each) cans of crab meat, drained
1/2 cup slivered almonds
1 loaf of round bread, any flavor
1 cup shredded cheddar cheese
Paprika for sprinkling

Preheat oven to 350*F (175*C). Grease a 12 x 8-inch square baking dish; set side.
Combine the cream cheese and milk; add Worcestershire sauce, parsley, salt, horseradish, mustard, garlic powder and pepper mixing well. Stir in the crab meat, green onions and almonds. Spread mixture into prepared baking dish and bake for 30 minutes.
Cut a circle out of the top of the bread and scoop out the inside. Discard the insides or save for another use.
Remove crab mixture from oven and spoon into hollowed bread. Sprinkle with shredded cheese and paprika. Place the bread bowl on a baking sheet and bake, uncovered, until the cheese is melted.
Serve hot with an assortment of crackers.
Makes 10 to 12 servings.

Tailgating Recipes: - Hot and Cheesy Chili Dip

1 (16-ounce) can chili without beans
1 (8-ounce) package cream cheese
2 cups shredded cheddar OR Monterey Jack Cheese OR both

Preheat oven to 350*F (175*C ).
Spread cream cheese evenly on the bottom of casserole dish.
Layer chili on top of the cream cheese. Sprinkle cheese evenly over the top.
Bake in oven until cheese melts, approximately 12 to 15 minutes.
Serve warm with tortilla chips.
Makes about 4 1/2 cups dip.

2 (15-ounce each) cans artichoke hearts, drained and chopped
1 cup freshly grated Parmesan cheese
1 cup mayonnaise
1 small onion, finely minced
Assorted crackers and/or crusty baguette for accompaniment

Preheat oven to 350*F (175*C).
Combine all ingredients, and spoon into a buttered 8-inch square baking dish.
Bake until bubbly and lightly browned, approximately 45 minutes.
Serve warm with assorted crackers or slices of a crusty baguette.
Makes about 4 cups.

Touchdowns and beer, first down and nachos, Blitzburgh and Buffalo wings. Enjoying the big game doesn’t mean you have to subject your body to big weight gain or greasy snacks. There are easy ways to add a bit of health to your hearty celebration, and if your guests knew, they’d appreciate it.

Construction of a resort project at the Cherry Grove Pier in North Myrtle Beach is still under way, and the owners and developers hope it will be completed by fall 2007.

Tailgating Recipes: - Hot 7-Layer Dip

1 (16-ounce) can ORTEGA Refried Beans
1 (15.5-ounce) can black beans, drained
1 (1.25-ounce) package ORTEGA Taco Seasoning Mix
1/2 cup sour cream
1 cup ORTEGA Salsa - Homestyle Recipe (Mild), any variety
1 (4-ounce) can ORTEGA Diced Green Chiles
2 to 3 tablespoons ORTEGA Diced Jalape os
1 cup shredded cheddar cheese
2 large green onions, sliced
1 package tortilla chips

PREHEAT oven to 375 F.
COMBINE refried beans, black beans and seasoning mix in medium bowl. Spread bean mixture in ungreased 8-inch-square baking dish.
SPREAD sour cream over bean mixture. Top with salsa, chiles, jalape os and cheese; cover.
BAKE for 20 minutes. Uncover; bake for an additional 10 minutes or until cheese is melted and dip is bubbly. Garnish with green onions. Serve with chips.
Makes 10 servings.

Tailgating Recipes: - Hershey’s Gridiron Cake

Green, red and yellow food color
1 (16-ounce) can creamy vanilla ready-to-spread frosting, divided use
1 tablespoon HERSHEY’S Cocoa or HERSHEY’S SPECIAL DARK
Cocoa1 2/3 cups HERSHEY’S Premier White Chips
1 (8-ounce) package REESE’S PIECES Candy
11 HERSHEY’S KISSES Brand Milk Chocolates
11 REESE’S Peanut Butter Cups Miniatures
3 HERSHEY’S HUGS Brand Chocolates
6 ROLO Caramels in Milk Chocolate
2 TWIZZLERS Strawberry Twists
GRIDIRON CAKE (recipe follows)

Prepare GRIDIRON CAKE. For chocolate frosting, stir cocoa into 1/3 cup frosting; stir until smooth. Tint 1/3 cup frosting orange with 1 drop red food color and 2 drops yellow food color; stir until blended. Tint remaining frosting green with 2 or 3 drops green food color; stir until blended.
Mark “end zones”, 2 inches wide at each end of cake, using wooden pick; frost one end zone with chocolate frosting and the other end zone with orange frosting. Frost the area between end zones with green frosting; mark 5 yard lines with wooden pick. Place white chips all across cake on yard lines.
Use white chips to spell out “HERSHEY’S” on chocolate end zone; use brown REESE’S PIECES on the goal line. Use yellow REESE’S PIECES to spell out “REESE’S” on orange end zone. Use orange REESE’S PIECES on the goal line.
Remove wrappers from chocolates and peanut butter cups. Arrange teams on cake playing field, using HERSHEY’S KISSES Brand Milk Chocolates as one team and peanut butter cups as second team. Place HERSHEY’S HUGS Brand Chocolates as referee officials on the field.
Unwrap ROLOs; for goal posts, stack 3 ROLOs in the middle of each goal line on each side of field. Shape strawberry twists into “U” shapes for goal posts. “Glue” with frosting to top of each stack of ROLOs.
Makes 18 servings.
